My Homestyle Flat Beans Curry (Simba Curry in Odisha)

  • 300 gm.  Flat beans  
  • 1/4th of a medium size Eggplant(Brinjal)
  • 1  medium  or 2 small size Tomatoes
  • 2 cloves of  Garlic finely chopped for seasoning
  • 1 to 2  Dry Red chillies
  • 1/2 tsp. Turmeric powder
  • 1/2 tsp. Mustard seeds
  • Salt to Taste
  • Oil to Cook
  • For Masala :
    • 150 to 200 gm. peanuts(groundnuts)
    • 2 cloves of Garlic
    • 1 tsp. Mustard seeds
    • Coriander leaves
    • 1 Green chillies
  • Wash all the vegetables(Flat beans, Eggplant and Tomatoes) and drain the excess water.
  • Cut the Flat beans  into  equal halves  and cut the Eggplant and Tomatoes into small pieces.
  • Take all the vegetables in a pressure cooker and add little water, 1 tsp. turmeric powder and 1 tsp. salt. Switch on the gas in a medium flame and cook till 3 to 4 whistles.
  • Now take all the ingredients mentioned above  for Masala in a mixture and make a fine paste of it.
  • Once the paste is ready and the cooker cools down, heat a  pan with 2 tbsp. oil, add mustard seeds. Once mustard seeds start popping , put the garlic pieces and 1-2 dry chillies and mix well.
  • Now add the Masala paste into it and stir it continuously for 3 minutes, so that it wont get burnt.
  • After 3 minutes, mix the boiled vegetables into it, add salt if require and mix well again.
  • Cook it for another 10 to 15 minutes in a low flame until all the excess water goes off. You can mix  a little fresh cream or milk , which is optional.
  • Flat beans Curry is ready. Serve it hot with rice or roti/chapatti.
